All Purpose Vinaigrette

Here’s a simple All-Purpose Vinaigrette that I like to keep on hand for quick salads or to dress up fresh vegetables. I especially like it drizzled over this yummy Caprese Bean Salad, which I make all summer long when ripe garden tomatoes and fresh basil are plentiful.

All Purpose Vinaigrette
makes about 1 1/4 cups
Ingredients
3/4 cup extra virgin olive oil (use really good quality)
1/2 cup red wine vinegar
1 teaspoon kosher salt
1 teaspoon ground black pepper
Directions
Combine ingredients together until homogenous. I like to mix and store my homemade dressings in this nifty dressing shaker, but a jar with a tight-fitting lid also works.
