Pina Colada Fruit Salad

The girls and I visited a beloved Aunt recently and she sent us home with the most wonderful supply of fresh blueberries and raspberries.  I used some of them to make this Pina Colada Fruit Salad that I've been wanting to try - the thawed pina colada mix and touch of almond extract add an interesting flavor and give the fruit a wonderful glazed appearance.

Pina Colada Fruit Salad

serves 8-10

Ingredients

  • 1/2 cup fresh raspberries

  • 1 1/2 cups red grapes

  • 1 1/2 cups green grapes

  • 1 1/2 cups fresh blueberries

  • 1 1/2 cups halved fresh strawberries

  • 16 ounces pineapple tidbits, drained (cut smaller if needed)

  • 5 ounces frozen non-alcoholic pina colada mix, thawed

  • 1/2 teaspoon almond extract

Directions

  1. Place all the fruit in a large bowl.  

  2. In a small bowl, combine the thawed pina colada mix and almond extract; pour over fruit and gently toss to coat.  Refrigerate leftovers.
