Sautéed Power Greens with Garlicky Mushrooms

I love power greens, but I occasionally find myself with more than I need. This recipe is a great way to use power greens the next time you find yourself with more than you need..
Sautéed Power Greens with Garlicky Mushrooms
makes 6 servings
Ingredients
- 2 tablespoons olive oil 
- 1 clove garlic, minced 
- 8 ounces white button mushrooms, sliced 
- 10-12 ounces washed power greens 
- salt and pepper to taste 
- 1 teaspoon red wine vinegar 
Directions
- In a very large skillet (12-inches or more) over medium heat, sauté sliced mushrooms in olive oil for several minutes, stirring frequently and seasoning with a little salt and pepper, until mushrooms give off their liquid. 
- Add the minced garlic and continue sautéing for several minutes until the mushrooms caramelize on both sides; remove from pan and set aside. 
- In the same pan, add the power greens; lower heat and cover pan with lid for several minutes until the power greens start to wilt down.
