Sautéed Power Greens with Garlicky Mushrooms

Sautéed Power Greens with Garlicky Mushrooms

makes 6 servings

Ingredients

  • 2 tablespoons olive oil

  • 1 clove garlic, minced

  • 8 ounces white button mushrooms, sliced

  • 10-12 ounces washed power greens

  • salt and pepper to taste

  • 1 teaspoon red wine vinegar

Directions

  1. In a very large skillet (12-inches or more) over medium heat, sauté sliced mushrooms in olive oil for several minutes, stirring frequently and seasoning with a little salt and pepper, until mushrooms give off their liquid.

  2. Add the minced garlic and continue sautéing for several minutes until the mushrooms caramelize on both sides; remove from pan and set aside.

  3. In the same pan, add the power greens; lower heat and cover pan with lid for several minutes until the power greens start to wilt down.

  4. Uncover pan and start turning the power greens until completely wilted; stir in red wine vinegar and reserved mushrooms.
